Dogme Quad: Pilsner Malt and caramelized sugar, Styrian Golding Hops and Trappist Yeast. And then of course some freshly picked heather and some local heather honey. And to stay with "New Nordic" maybe a little juniper and anything else on Fanø that’s in season? |
The heather honey is the hard part as there is only 1 really awesome supplier of it and and he makes only a really small amount. Also Rosehips are in season during the summer and I think would be really nice in a beer like that. |

Ok so far beer sits as a Quad aged in Bourbon barrels and brewed with pils and lots of dark candy sugar. Spiced with local heather. |
Around 10 %, westmalle yeast ? As for the hops something to balance the c.sugars yet flowery enough to enhance the heather ? |

Mads I think we will brew the beer the day after the tasting so no drinking it at the tasting. Especially if ages in barrels. |
