And then of course some freshly picked heather and some local heather honey. And to stay with "New Nordic" maybe a little juniper and anything else on Fanø that’s in season?
Message FrumptyDumpty 21:41 Wed 3/21/2012 The heather honey is the hard part as there is only 1 really awesome supplier of it and and he makes only a really small amount. Also Rosehips are in season during the summer and I think would be really nice in a beer like that.

Message FrumptyDumpty 11:10 Tue 3/27/2012 Ok so far beer sits as a Quad aged in Bourbon barrels and brewed with pils and lots of dark candy sugar. Spiced with local heather. What else? What kind of ABV what kind of hop level? Any yeast suggestions?
