The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

Bottle at hawidere, 2013 vintage. Pours orange. Aroma is funky, fruits, vinegar. Flavor is sour, bitter, funk, mustiness, vinegar, dry, slight cognac like dryness and hint of grapes. Finish is sour and dry. Overall: very good

jinroh (4272) - ESTONIA - JUL 31, 2018
Bottle from the brewery. I think I kept it for more than 2 years before opening this now. Pours yellow, some carbonation but not much foam. Nose is just insane, funky, sour and all these autumn harvest funk elements, barnyard and horse sweat. Taste has some light acidity but not too much, also sweetness. Great balance, overall ultimately drinkable, only wish I had some more of it in stock!

Juks (3231) - Tallinn, ESTONIA - JUL 30, 2018
750ml bottle, thanks jinroh. Pours hazy golden, white head stays. Aroma is fruity, sourish, rotten apples, hints of vinegar, plums. Taste is vinegary, very woody, cherry skins. Medium body, average carbonation. Very nice and complex

Flaska från Emil, delad under bottleshare. Tack Emil! Riktigt, riktigt gott!

Cheeseboard (1145) - Bridgwater, Somerset, ENGLAND - MAY 21, 2018
750ml bottle, 2010 vintage at a bottle share. Pours clear golden orange with practically no head. Aroma: musky sour green apple skins, white grape skins, earthy, brett, funk, oak. Fizzy, medium statured white head thats short lived and settling to a thin cover on top. Lightly hazy copper/gold hued ale. Nose of light citrus and green apples. Body is light carbo more than you'd expect by the appearance. Touch oily, spritely and tart. Green apples, light citrus and a touch buttery with light vinegar notes, slight funk and a mild tartness. Dry puckering finish, leaves fruity with some apricot notes. Not bad but past it's prime i,d say. Still a nice experience. Don't remember where i got this bottle from. Cork dated 2013, bottle dated 2010 2833 UT "rates" OA 4.49

This is an elegant one. The balance and the mouthfeel its wild profile are so enjoyable. I could drink a bathtub of it.
