Going to a hog roast tomorow and my contribution is mac & cheese. What’s your favorite recipe? I do the classic bechamel sauce base:

Roux with 12 tbsp butter and 12 tbsp flour, simmered on med heat for 5 minutes. Remove from heat and slowly whisk in 6 cups whole milk until fully-incorporated. Return to heat and simmer on med heat until finger trails streaks on spoon. Slowly mix in 1.5# shredded sharp cheddar. Cook 1 lb elbow mac for 7 minutes, drain and mix with cheese sauce. Pour into 9 x 13 baking dish and bake @ 400 for 20 minutes. top with .5# shredded cheese and broil for 3 minutes or until cheese forms a scorched crust.

I made some the other day that had carmelized onions and roasted butternut squash in the cheese sauce. Very tasty

I keep thinking that one of these days I’ll try making mac & cheese by boiling the pasta in beer instead of water. Never get around to it though, anyone else ever tried this?

Didn’t say it’s low fat, but it is really good. I don’t make/eat it very often, just on special occasions.

1 cup macaroni
1 cup mayonnaise
1 can cream of mushroom soup
1 pound shredded sharp cheddar cheese

Cook macaroni & drain. Combine all ingredients and mix well.

Put in greased casserole dish. Top with crushed cheese crackers and cook at 350 degrees until bubbly.

Thick cut uncured bacon is always a great addition to the dish.

RedStar Brewpub (before they closed) used to make a spicy one with lots of jalepenos in it, as well as a little grilled chicken. Very good stuff.
