COMMERCIAL DESCRIPTION
Produced since 1994, Neige Première is the leading inspiration of La Face Cachée de la Pomme. It is the very first ice cider (also known as apple ice wine) to be commercialized in Québec and throughout the world.

In the fall, very ripe apples are picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by natural cryoconcentration naturelle. After few days of intense cold, concentrated must, representing ¼ of the initial quantity of juice, is collected by gravity. The extracted must is then placed in stainless steel tanks where it ferments at least six months at low temperatures before being bottled.

ABV varies between 10-13% depending on seasonal temperatures.

UPDATED: OCT 21, 2023 375 ml bottle shared by Willrunforbeer. Thank you! Aroma is bold fresh pressed apples, toffee and just a touch of granny smith like nuance. The flavor shows a mild tart apple with a mildly sweet finish. Yet shows just enough tartness. Just awesome.

My 9000th rating.] A golden copper coloured pour with a ring of transparent bubbles; remarkably fresh red apple aroma with a hint of apple brandy; bittersweet apple taste with some toffee; and a long warming finish. Excellent.

UPDATED: JAN 27, 2022 Bottle purchased from Amazon of all places and drunk at home. Dark gold, clear and flat. Sweet and boozy aroma with strong applesauce and cognac in the nose. Sweet taste, more apples and some sugary toffee, mulling spice. Orchard fruit tart notes appear the sumptous finish. No carbonation but it's got a thick, oily body. There's so much to this.

UPDATED: MAY 18, 2021 This is a backlog rating from 2008 from a bottle picked up in Michigan, from notes. When I had this beer it was average to below average for the style and not something I wanted to have again or I just didn't get back to my notes because of my technology at the time, work and/or family. Words to describe this beer are sweet malts, apples, apple juice with sugar added, warming but not boozy, without question this exceeds anything else that mentions the word cider.

Taste: very sweet and sour red apples, apple pie, a bit spicy. Overall: nice one. 8-5-9-5-17=44 October 13, 2023. 200ml (thx, Jean-Philippe C.!) shared with Alex at Ryan's. Vintage 2014 from SAQ. This is an excellent world-class product that deserves an even higher rating than I put in the past. 9-5-9-5-18=46

UPDATED: JUN 1, 2019 Shared bottle with wife at weekend to remember 5/31/19 at the marriot downtown indianapolis. Loves those fireworks from the hotel floor! Light honey whiskey color. Aromas apple pie, alcohol, slight barrel age, slight cinnomon. A complex ice cider. Interesting coming from just apples! Flavors apple pie, alcohol, wood, slight whiskey essense but not so much an impression. Smooth highly sweet and just darn delicious and different from any other wine. Much different from cider.

UPDATED: DEC 17, 2018 D'un superbe doré lumineux où de belle jambes sont visibles sur la paroi. Un nez de pommes mûres, de compote de pomme et de poires en conserve. Des saveurs fruitées plus que par la pomme et acidulées, accompagnées d'une belle amertume. C'est presque poivré, c'est sucré et ça goûte les fruits, en l'occurence la pomme et la poires, cuisinés.
