"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: JAN 8, 2023 2020 version, 14.6%. Pours pitch black with beige head, little carbonation. Wonderful complex nose on all the things I will mention in the palate. Palate: creamy, oily, dark chocolate, roasted malts, coffee, licorice, caramel, wood, a bit boozy, nicely integrated bourbon BA. This is a masterpiece indeed. The complexity and balance is fantastic! You can sip this like a good whisky.

Absolutely stunning Impy, lives up to the hype, rich, well-balanced, complex, beautiful. UPDATED: DEC 20, 2022 This 2022 'brand' version of the famous GI Bourbon County stout has a different ABV (13.8) from the standard version (14.6) and the 30th anniversary reserve version (14.4). The bottle label encourages aging a few years -- up to 2027 -- but I'm having it now. :) Pours black with tan head about half-finger length that gradually recedes, leaving very minimal lacing. Aroma is first bourbon and then purple fruits, coffee, and finally lots of chocolate. Taste is bourbon, dark chocolate, and lots of vanilla hitting in the finish, with almonds and acid -- frankly a little too much acid for my tastes, but otherwise exquisite. Creamy, smooth mouthfeel.

Having this on Easter, 2022. Powerful aroma of bourbon, dark chocolate, dark fruits, booze, burnt sugar, oak, and vanilla. Head is very small and disappears, except for light tan ring around the glass that lingers. Lacing also disappears quickly. Big boozy flavor of dark bitter cocoa malt, vanilla, licorice, bourbon, bread, almond butter, coffee. Some definite acid astringency in the finish. Not as sweet as I was expecting; actually not very sweet at all. It's very complex. Highly recommend for slow savoring! Goose Island's bourbon stouts are my second favorite after Founders'. Marvelous stuff.

Pours pitch black with small head that dies quickly; no lacing. Aroma is mega-super-duper - I could literally smell this about half a foot away after I poured it. Up close, it’s vanilla, bourbon, the best dark chocolate aroma I have ever encountered, licorice, booze, and maybe even a bit of fruit. Taste: @*#&! This is ... WOW! *@&#! I do not even know how to describe right now. Let me try now that I have settled down. Bourbon, dark chocolate, vanilla, booze, more bourbon, more dark chocolate. Greatest mouthfeel ever - not thin at all, but not thick - just silky and enveloping. Flavor lingers for ... I feel like I am going to taste this another 20 years. Demands to be savored slowly, and good thing, because that ABV sure is high. &*@#! This is the most flavorful beer I have ever had, and everything works together so well. Founders Breakfast Stout was great, yeah, but this...this is just in another dimension.

Sabor a café, chocolate, toffe, vainilla, bourbon, ciruelas, uvas pasas, regaliz, ligero ahumado, frutos secos. Cuerpo medio alto, dulce pero equilibrada, se nota el alcohol sin embargo no molesta, todo en su lugar, fantástica imperial stout añejada en barrica, una maravilla!

Taste is explosion of flavors: roasted malts, hint of vanilla, lots of oak, licorice, dark chocolate with lingering bourbon and rum. Finishes with lingering barrel. Full body, average carbonation. Exceptional beer with tons of flavor with lingering barrel, just amazing

UPDATED: OCT 7, 2022 Аромат хороший и сильный, много бочки, дерево, кофе и шоколад, как будто нотка от дымка, легкая сладость от бурбона. Цвет черный, даже угольный, пенка небольшая кофейная. Вкус весьма сбалансированный, есть кофе и шоколад снова, немного йода при глотке, легкая сладость от бурбона, много бочки на финише. Немного как будто чернослива появляется в конце, достаточно сложный вкус но нету ничего необычного.

Flavor presents all of the above, only more dark fruit and wood. Texture adds firm, viscous body and lively fizz. I needed this today - I just buried my furbaby Aida. :_(

Pours deep coffee with a nice tan head. Aroma presents roast malt, coffee, bourbon and woody tones with an earthy hint. Flavor yields rich roast malt, bourbon, chocolate, woody and earthy tones - fab! Texture offers thick, viscous body and lively fizz. Come to Bourbon County!

Comes out of the tap rich coffee brown with a dark tan head. Rich aroma fills the nostrils with coffee, roast malt, bourbon-soaked wood, and subtle chocolate and caramel notes. This aroma screams "Drink me!" Bold flavor has rich coffe, toasty malt, sharp bourbon, oak, and chocolate notes that roar across the palate while caramel and molasses whispers tiptoe in the background. Thick, heavy, viscous texture has a fair if not strong fizz. I have been hunting this for some time, and he has been - ahem - a wild goose chase. Until now. This is a goose worth chasing!
