"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: MAR 26, 2021 Wat valt hier nog over te zeggen, dat het een fantastisch bier is, dat is het niet, het is qualitatief wel oké , maar veel te veel drop en leer, en is zwaar overgehyped, net als bij Westvleteren. Het is veel te duur en de cultus eromheen is al helemaal idioot te noemen, de hele nacht voor een bierwinkel wachten in de hoop dat je een flesje bier mag aanschaffen voor veel geld. Sorry....doe mij maar een KBS van Founder's of een Necessary Evil van Thornbridge, stuk makkelijker verkrijgbaar en goedkoper.....

UPDATED: MAR 1, 2021 (2018 bottle shared @ Erik's tasting, Stockholm, July 13/19) Pours pitch black with a small pale brown head. Notes of deep caramel and and toffee malts soaked in chocolate and quite some bourbon, with fairly prominent dark fruit vinousness, vanilla barrel vibes, smoky charred oak, subtle coffee, quite highly sweet through the sip but finishes off dry, lots of oak and bourbon, low to moderate charred/roasted bitterness, slight alcohol warmth but not extreme given the ABV. Quite full oily viscous body with very soft carbonation. Certainly a very good 'malt and barrel' stout, not some sort of revelation at this point in the history of BA stouts but enjoyable on its own merits.

UPDATED: FEB 6, 2021 Good color, smell, and taste. It is thick and feels like you can almost chew it. Not easy to locate but after trying in I can see why it goes quick when you can find it.

UPDATED: JAN 4, 2021 Degustada com um charuto Flor De Lá Vega Toro Escuro, na cor um preto muito opaco sem nenhuma transparência, no aroma lebra muito um Bourbon (obiviamente) mas fica muito em destaque o amadeirado, defumado e coco PS: Não é um estilo q costumo gostar mas com toda certeza está no meu top 5

UPDATED: JAN 1, 2021 Butelka 1 pinta, czyli 0,473 litra. Barwa intensywnie czarna, z brązowymi refleksami, nieprzejrzysta. Piana beżowa, średniej wysokości, ale bardzo małej trwałości, nie zostawia żadnych śladów na szkle. Aromat jak dla mnie jest obłędnie słodki, mocno kompleksowy, szlachetnie alkoholowy, likierowy, deserowy, a nawet bombonierkowy. Jest w opór mlecznej czekolady, melasy, cukru muscovado, karmelu, toffie, czerwonych owoców jak wiśnia, czy śliwka, jest nawet odczucie zapachu nadzienia z tych owoców. Do tego akcenty pumpernikla i dymu. Wszystko wieńczy piękna i wyraźna beczka po bourbonie, mocno waniliowa i świeża. Mnie ten zapach pochłonął! W smaku też poprostu wow! Jest spora, likierowa słodycz, potężna dawka deserowej czekolady, budyniu czekoladowego, melasy, cukru muscovado, karmelu, toffi. Dużo czerwonych owoców w typie wiśni, czy dymionej śliwki. Świetnie uwydatniona beczka po bourbonie i wynikająca z niej moc wanilii. Na finiszu czuć świeże dębowe deski i lekką cierpkość. Jest gładko i kremowo w odbiorze, ale troszeczkę wychodzi alkohol, co nie dziwi przy tym woltażu. Goryczka średnia, dużo ciała. Nisko wysycone. Wypiłem już parę piw w swoim życiu, ale taki efekt wow mam już rzadko!

UPDATED: JAN 1, 2021 2020 release BCS I had to give this 5 because it’s easily the best beer I’ve tried. SO delicious and satisfying, it’s quite an adventure to drink. The depth and complexity is truly wonderful: I picked up lots of cherry as well as vanilla, but not in a sickly sweet way. It’s very hard to describe such a fantastic beer! I had questions about the price of this (£20) but would pay that again as an annual treat. One of life’s real pleasures.

UPDATED: DEC 26, 2020 12oz bottle poured into a Tulip glass, Black in appearance, aroma is rich, coffee, chocolaty and sweet. Flavor is rich, roasted, coffee, licorice, sweet, sticky and boozy. Will recommend to friends.
