Excellent barleywine, reminiscent of Bigfoot but offering more balance, with heavy notes of caramel underlined by citrus pith and dried fruit, followed by pine and a moderate woody bitterness. Delicious.

Keg at the brewery, 4/24/23. AOB = Asheville on Bikes. AOC is something else entirely. Dark clear brownred, medium tan head, average retention. Aroma of roast, coffee, mild smoke. Taste is roast, cherry, coffee, chocolate, green, nuts. Well balanced, nice.

Wedge AOB Stout
Very acidic for an American stout, with a strong cascara presence overshadowing the unsweetened chocolate and dry roast. Undertones of berry and caramel. Finishes dry and moderately bitter. I dig the back end, but that bright acidity is distracting.

Very raw quality to this pint, with an outsized wort note offset by yeast, apple, and a modest citrus bitterness. Finishes with a lingering pine and mineral streak. Seems unrefined.

Odd IPA, with a husky, toasted graininess that adds a dark roast coffee-ish quality to the pint. Citrus and a slight stone fruit note leads to pine on the back end. Just an all-around weird pint.

Just labeled as "Saison" in the tap room & their website, 7.8%. Orange-y gold, slightly jellied, tulip pour while waiting for our dinner table to open up nearby. Peppery, yeasty, apple aromatics. Taste is black pepper, lime leaf, earthy bitterness, starch, lingering mild pith. Spirited, crispy, quaffable. Great.

Wedge Choco-Chili Stout
On tap for the second round as my wife & I wait for our table at Rosa Bees. Tulip pour. Black with some brown highlights, matte with an oatmeal head. Extra toasty malt chalky, baker's chocolate, too cold for chilis on the nose. Acidic, rye bread, mineral water, earthy chocolate dust. Very faint chili's that don't bring much heat till way way later. Starchy, but not thick. Abv was on point. Not enough chilis or chocolate.

On tap @Wedge Foundry in between movie night & dinner with my lovely wife. Hazy, sort of watermelon color. Lighting is pretty soft in this barn. Yeasty, sour, yogurt, subtle raspberry nose. Yeasty, raspberry skin, yogurt, earthy lime & grape finish. Not all that sour. Kinda okay. Better beers on tap.

On tap @Wedge Foundation before dinner with my wife. Clear, MGD frothy. Minerally, faint veg, pepper & fruit nose. Sharp, peppery, bold earthy hops, salt water. Refreshing. Solid to very good. Teddy would be proud.

Pours hazy amber thin white lacing. Very mild fruity aroma and yeast. Taste is mild sweet with fruit notes. Unique flavor in the finish, mild bitter at first which builds at but but finishes smooth. Decent overall but not as good as some of their other IPAs despite being the flagship.

Draft at Wedge Foundation. Pours brown and turgid with very little head. Leaves some lacing in the glass. It’s just a big old malt bomb on the nose and tongue. Not much balance or depth of flavor.

It pours hazy straw with a creamy off white head. Head retention is good. It has a floral and perfumy aroma. There are background orange and coriander notes. It has orange and corrainder flavors with a bit of perfume and floral. There is a doughy and light berry note. It has a medium light body that is a bit spicy in the finish. Overall, quite flavorful and easy drinking.

Very nice classical IPA, with an earthy, husky malt base and plenty of yummy resin and pine notes leading to a clingy bitterness on the finish. A good reason to walk across the bridge from New Belgium.

Lots of biscuit from the Vienna malt, and the Wakatus provide lime, hay, and citrus notes. Gets a bit yeasty on the back end, which makes a second pint not all that appealing. Not bad, but could use a little fine-tuning.

Wedge Iron Rail IPA
The Aromas are pine resin, mint and a little caramel malt. Flavors are somewhat like nose, someone in the tradition of British pale ales but too bitter. Decent body and carbonation but a little medicinal in the Finish. I've had a number of traditional British ipas in the UK and at home and that's what I based this judgment on. Great label though being a former railroader myself.

Draft at the brewery. Hazy pale orange in colour with medium carbonation. Aromas of red grapefruit, pale malt, and butter. Flavors of green onion, caramel malt, and grapefruit peel. Light bodied with a sharp bitterness. Decent, but that buttery aroma threw me off.

Found on tap at brewery. Pours a welcoming solid golden color with light head. The pepper hits you from the first sniff. It's not spicy but it certainly has the hot pepper taste. No after taste though. Interesting enough to try at least once.

On tap at Wedge, pours a cloudy bronze / amber with a small beige head. Aroma brings out light farmhouse yeast and toasted bready malt. Flavour is along the same lines, with farmhouse yeast, earthy notes and a bit of oaky booze. Not exactly authentic, but it’s pretty convincing. Nice stuff.

Draft at the brewpub. Rusty orange. Creamy halo of white foam. Polished aromas of lemon, honeyed biscuits, hard peach candy, and hay dust. Very minor note of DMS. Soft and graceful carbonation. A snug mineralic clench is enveloped by an even interplay of firm honeyed biscuits and a Hallertau-laced herbal zip. Lush notes of hay generate rich textures beneath a snappier Munich nuttiness and Vienna-derived fallen leaf and earthy tobacco swirling. A vague lemony hop sparkle accompanies the elegant but depth-lending splash of peachy esters, though the hops are more scratchy in their herbal and peppery dimensions than anything. Melanoidin malt supplies the snappy, cleanly fermented body with bountiful browned breadcrust notes, as biting yeast cleanses the sugar from the tongue and strips the malt down to its unadorned essence, breathing vitality into the snappy yet richly textured trail of honeyed biscuits and ongoing lush hay. Sneakily complex Hallertauer thrives in the balanced finish, as sassy lemon and firm wood notes team up with pepper atop a long-lasting medley of breadcrust and vibrant tobacco flavors. An unabashed malt bomb, yet boldly hopped at the same time. Would love to see Carl put a decoction or three on this, like with his excellent Czech-style pils and Munch Dunkel. Having consumed many pints and a few growlers of this nectar over the past year and a half, I was so heartened to see that he garnered a gold at GABF for this, as it's one of the finest märzenbiers in the states, IMHO. Hats off!
