Upland Revive
Bottle from wine tree east. Pours a clear gold with a finger of foam that dissipates quickly. Big lychee nose with kiwi and passion fruit dominating. Slight yogurt flavor on the palate with tons of fruit, cinnamon, & chamomile. Good tartness but also with some creaminess that balances it out. Quite good.

Upland Peach Lambic
Draft at Bru Craft. Billed as an oak-aged blonde sour at 5.5% ABV. Cloudy pale yellow orange pour with a foamy white ring. Pungent sour with notes of orange, plum and peach. Big oak. Lemons. Grapes. Not quite a proper lambic but a good strong flavorful sour.

Upland Revive
Bottled September 2016, drunk 4/1/17.
Brassy-golden body shows good clarity and a beige-flecked, off-white head atop with moderate retention.
Fruity, playful Brett in the nose is quickly consumed by a much more strong lactic character, as light oak/wood notes and peachy-nectarine-like fruit juice notes quickly up the intensity. On the very end, the chamomile is noted and while itís not overdone, it stands apart from the rest of the beer and, I donít think, adds anything whatsoever. Some light guava and pineapple reprise on the finish, with a pretty deep funky, barnyard character and no alcohol or flaw.
In the mouth itís dry, well-carbonated and engaging with a softly-malty texture and light traces of honey-like sweetness. Flavors wax and wane between tropical, bright, juicy Brett and stronger, more austere lactic acidity and oak. Chamomile, all the while, is lightly noted on the finish of every sip and really seems completely out-of-place to me. Stone fruit-like juicy and tart acids are well-integrated in to the beer. No alcohol or flaw. Very competent, though still seems like most other American sours; not sure the lambic moniker here.

Draft. Orange, banana (paw paw), persimmon, biscuit malt, and light hay aroma - very fruity. Cloudy pale yellow with small head. Moderately sweet persimmon, paw paw, orange, biscuit malt, moderately sour lactic acid, and mildly bitter grass flavor. Finishes with a sour vinegar flavor. Good body. Delicious - spectacular fruit flavor with a nice mixture of sourness. Loved this one - hopefully they will make this again someday.

Draft. Biscuit malt aroma with a hint of lavender. Golden yellow with small head. Mildly sweet biscuit malt, light bitter straw flavor. Light body - mild floral finish. Nice maltiness - easy drinking. Didnít get much lavender influence though - basic.

Upland Blackberry Lambic
Batch 1 bottle, drunk I believe some time back in 2008-ish. Again, rating against an American Sour, not a Lambic.
Chilled, rested bottle erupts a few feet in to the air very forcefully. We got about 40% of the bottle remaining, with tons of sediment and carbonation. Deep violet-golden with a huge head, but much of that due to overcarbonation, Iím sure.
Very sour with both fruit and bacterial acidity proposing quite a bit of malic, lactic and acetic acid. Feels like thereís some wheat behind it, as well as light honey and biscuit. Brett adds brightness and the berries are quite lovely, being nicely integrated and providing pepper, currant-like notes and tons of acidity.
In the mouth itís very, very, very sour. Intense amounts of lactic acid are bolstered by a good deal of acetic acid. Lots of oak tannin, but thankfully not heavily toasty. Texture is highly attenuated, but still provides a good suppleness and very light malt sweetness. Strong but tight carbonation and no alcohol or flaw. If you can get past the intense sourness, this is fine stuff.

Upland Peach Lambic
Rating against an American Sour Ale not a Belgian Lambic.
Draught at Row 34, 2/22/17.
Lightly-to-minimally hazy, golden-amber with a small, beige and peach-flecked head that fades to cover quickly.
Peach in the nose is clear, authentic and fairly well-integrated with the beer character, which itself adds plentiful lactic and Brett acids to provide light band aid and leather that combines well with the stone fruit minerality and strong funk. Lots of skin, acid and pit character which really works nicely with the funky character of the "lambic". I find the jammier renditions of fruit sours still enjoyable but far inferior to the renditions where the fruit is more highly macerated/integrated with the rest of the beer. Anyhow, light oak, but low toastiness with light caramel-tinged honey from the malt and some acetic character, but nowhere near what I remember Upland having when they first started.
Flavor-wise, the beer is quite acidic with lots of oak tannin, vanilla, honey, caramel, etc...quite amply malty, with plentiful lactic and light acetic acids. The peach flavor is fantastic, with spicy pit, leathery skin and tons of juicy acidity. Sour, but not intensely so; certainly has let-up over the years. Moderate amounts of engaging carbonation and a soft, lightly oily texture with no alcohol or flaw.

Pours a clear and thin looking pale yellow with a thin white head. The aroma is faint, with minor amounts of grassy hops, grain, and yeast. The taste is slightly bitter. It isnít as subtle as the nose. Much more grass come through here, as well as bread, honey, and corn. The downside to this is there is a fairly heavy metallic flavor found in here. That metallic flavor dominates the aftertaste. Light in body, slick in texture, and average in carbonation. My mediocre grade to this one actually might be generous.

Draft to pint at Upland in Carmel. Looks good for the style; a translucent dark cola with light beige head that steadily dissipates into thin lacing. Smells of dark malt and hops alongside mild notes of roast and yeast. Tastes like it smells, but more tart than roasty, and with a slight berry presence. Mouthfeel is medium-bodied and mildly tart. Enjoyable.

Tastes like it smells, but roastier, and eith some hops as well. Mouthfeel is medium-light to medium-bodied and semi-dry. Okay.

On tap at Johnís Restaurant & Tavern in Winfield, IL., and dispensed to a tulip displaying a murky, orangey gold color, with a fingerís width of silky, white foam that reduced to a persistent ring, a little film, and dots & dashes of lacing. The nose was tart, pit fruit as apricot & skins, ginger, a hint of herb as tabasco without the heat, and a touch of cookie-like malt. Medium bodied, with good effervescence, the taste continued the apricot, ginger, and tartness, added slight, tannic astringency, some vinous nature, and finishing dryness. Barring the odd herbal scent, a decent, non-overly puckering, even keeled Sour.

500 ml bottle to goblet (shared with the Mrs.). Looks good; a mildly to moderately hazy brownish cherry with very lively carbonation and fizzy lighter caramel head that dissipates intp thin lacing pretty quickly. Smells and tastes moderately tart with notes of cherry, oak, and a touch of funk. A bit of fig on the tongue as well. Mouthfeel is medium-bodied and effervescent with some well-balanced acidity. Enjoyable.

11.2 oz. bottle from The Party Source. Pours a cloudy light gold with about two inches of frothy white head, settling unevenly into a thick, bubbly ring and some film while sloppily lacing the glass. The dry hopping adds herbs and grass and soapy florals to hay, grapes, pears, apples, funk, champagne, and sawdust. Light-bodied, with medium carbonation and a fruity, funky, lightly tart mouthfeel. Dry finish. Pretty good dry-hopped sour.

Mix of lactic sour and wet wool funky with a pineapple juice finish. Taste is a mix of lactic and earthy sour, maybe 70/30 lactic to funk, with a dry tannic finish and a nice dry pineapple taste. Flavorful and complex. Different sour with a bit of a light palate at times but it is growing on me. Sour maybe 4 of 10. Draught at Eataly, 2/2/17.
Lightly to minimally hazy, soft, apricot-golden body with light carbonation visible, creating a small, apricot-flecked, off-white head with moderate to moderately-low retention.
Some juiciness breaks through in the nose, adding light apricot with honey and light acetic acid behind it, playing off each other quite enjoyably. Unfortunately, a LOT of the ginger is present in the nose, to the point of dominance, though itís not unpleasantly dominant, as long as you enjoy ginger. No alcohol or flaw. Lots of earthy subtle fruit, basement-like funk and bits of bread and honey from the malt.
Fortunately, the ginger is much less present in the flavor, or perhaps it just seems that way. Either way, the light spiciness is easily balanced by the strong apricot jam-like quality, fuzzy pit-like stone fruit notes and soft minerals. Great balance of Brett, lacto and acetic acids; not all that sour in the end, but nicely dry and pleasingly tart on the finish, leaving light apricot, spicy ginger and funky, fruity Brett notes lingering.

Aroma is a mix of earthy wet wool, lactic sour, apricot and ginger. Taste is much more lactic than funky sour. 80/20 lactic sour to earthy funk. Sour maybe 5 of 10, fairly sour. Full flavored and complex. Get the stone fruit, apricot flavors with a subtle heat of ginger in the finish. Really quite nice combo of flavors. Actually notice an almost heartburn heat from the ginger. Solid sour for sure.
