Wood Aging is a post treatment of the product which consist in having your beer in contact with a source of wood (barrel, chips, cubes, spirals) so as to impart character from the process.
Most commonly Oakwood is used, due to expedience and porosity. Other woods such as hickory, maple wood, French oak, redwood, walnut, cherry, chestnut and even sometimes cedar are also used.
The wood source can be fresh / new / neutral or have previously been in contact with Spirits or Wine to gain their specific character.
