750 ml corked & caged bottle, no idea how old but it's been sitting in my cellar for many many years; sampled December 2023. A very careful pour from the bottle produces an amber tinged, thin head. The beer is a rich brown color, that shows a hazy, amber brown hue when held up correctly to the light. The aroma smells of nutty malt, fruity Cherry notes, a sharp herbal character, and some spicy earthy fermentation notes. The flavor has a solid sweetness to it up front, but this is balanced by a bitter herbal note that lingers in the finish. The sweetness accentuates the Cherry flavors here, no neither are heavy-handed. The body has a nice viscosity to it that coats the pallet just a bit, but without being overly heavy; this is balanced by a prickly carbonation, that will not aggressive, still provides a balancing texture. Flavors of nicely toasted nuts, are accentuated by hints of oxidation that lean towards hints of Sherry, a dusty malt character that lingers in the finish, as well as some nice brown, whole grain toast flavors, and even a touch of cocoa flavors. The licorice flavors, are not distinctly noticeable, but it may be boosting the perceived sweetness of this beer. This is anywhere from 10 to 15 years old, and it is still doing quite well, very tasty, and I'm really enjoying this. It is age quite nicely and the oxidation character that is here plays very well with the Cherry notes and malt character. I don't really get licorice at all, but there is that weird herbal character here, maybe that's how it's aged over the long run, I don't know.

Bottle dated 2005, hope this isn't bad. The aroma is malt, slight chocolate, slight dates/figs. Pours dark brown with amber hues, no head, no lacing. The taste is sour with a little bitterness. The body is watery, the carbonation nil and the finish sour. I will just rate this the average as I blew it with the aging.

Many many thanks to Kolschtrinker for this sample! Pours dark, brown ubbles. Aroma is woody, leathery, roast. taste presents woody, leather forest leaves, toasted oak, ashtray, moderate roast with a gentle peat influence. Pretty complex, certainly doesn't seem like the 14 years aging has mellowed it much. No oxidisation either. Very good.

Okay, so I kind of missed the drink by date. It pours a very dark-brown body with just a wispiness of dark-tan head that settles quickly to a thin ring. The nose is roasty, vinous with a slight cherry-like tartness. On the palate, yes, a bit more tartness is evident, reminiscent of blackberry and some cherry, and it offsets the malty and dried-fruity sweetness. Roast is coffee-like and ashy but not burnt and not too bitter, and there's plenty of dark chocolate, but the tartness remains the most apparent aspect. The beer is medium in weight, medium-low in carbonation, and medium in acidity. Overall, it seems the sourness isn't part of the original profile and is more of a distraction than a desired complexity.

This Porter is black in color and pours less than half an inch of light-brown head that settles to a bubbly sheet and ring. The nose is smoky and roasty with notes of coffee, blackstrap molasses, burnt toast, dark chocolate, and bacon. On the palate, there are flavors of dark chocolate, cocoa, prune, coffee, smoke, grilled meat, and a touch of ashiness in the finish. It's quite sweet, but the moderately dark roastiness and subsequent moderate bitterness help to offset all that sweetness. The beer is full bodied, medium-minus in carbonation, and smooth on the palate. Overall, this is an enjoyable, fairly complex Porter with a nice smoky and earthy character.

Now this is how you do a spiced holiday ale. It's firmly malty with a solid, toasty, "bread crust" component, medium sweetness, some toffee, and a mild caramely character in the background, while the spices and herbs are also complementary flavors, not dominant ones. I suppose the spices are most apparent in the finish for that lingering "holiday" feel. Because of the cellaring, there's a nice earthiness that works well with the toasty malts. The decayed-wood earthiness is more apparent in the nose, joining the ultra-toasty malts. It's full bodied and fairly rich but most certainly not heavy or cloying, carbonation is medium, and the finish has enough dryness for solid drinkability. The beer has a very hazy, light-brown body and the tan head pours to a full inch before settling to a patchy sheet and tall rim, leaving a wide ring of lace on the glass. Overall, this is a really terrific winter beer, deliciously malty, nicely earthy from the cellaring, and delicately spiced. Very enjoyable. Too bad we can't get their beers any more.

When removing the cork on this barrel-aged Stout, it's clear the carbonation is gone, so when pouring the beer, it's very dark-brown in color but has no head at all. The nose is very peaty and has an unmistakable aroma of iodine, so the Islay Scotch barrel has a huge impact on this beer. Behind the peat is licorice and ash tray. On the palate, the peatiness again dominates, and since this isn't a powerfully sweet stout to begin with, it's showing ash tray, burnt meat, and cacao to go with prune and moderately sweet, dark chocolate. The beer is full-minus in weight, low in carbonation, and light-plus in acidity. Overall, I'm not a fan of Scotch, but I do like the overall character of Scotch when in "hints." Here we have the peaty aspect of Islay without the uncomfortable burnt of distilled spirits. If this beer had carbonation, it would be even more enjoyable, but even when flat, this is still very interesting and worth savoring and contemplating.

This 10-years-aged Kriek pours a slightly hazy, very deep-amber body with nearly an inch of tan head with a slight pink hue. The head fairly quickly recedes to a wide ring. The nose is very aromatic with dried sour cherry, green olive, and horse blanket. On the palate, the tart cherry flavor is present, but closer to subtle rather than intense, either because of the brewer's style, or because of the aging, or both most likely. In the evolution and finish, further flavors emerge of animal funk, dirty cellar floor, lemony tartness, and crackery malt. The beer is medium in weight, medium in carbonation, very dry in mouthfeel, and medium-plus in acidity. Overall, I'm sure this Kriek was brighter with fruit in its youth, but it may have gained in complexity in exchange. That said, I possibly might have preferred to open this beer 3-5 years ago. It just needs a stronger finish.

This Barley Wines pours a murky, tawny-brown body with minimal head because this cellared beer has lost its carbonation. On the nose, aromas are malty, sweet, and earthy, with caramel candy, dried fruits, molasses, decayed logs, toasted bread, mild cheese, and pine sap. On the palate, it's moderately sweet with flavors of caramel, toffee, fig, dried orange, marmalade, old wood, brandy, butterscotch, vanilla, cocoa powder, and molasses. The beer is full bodied, low in carbonation as stated, tangy in mouthfeel, and medium-low in acidity. Overall, this may be well past expiration, but it's delicious. It has aged beautifully, developing very complex, savory, and contemplative notes. Even the lack of carbonation isn't really an issue because the tangy mouthfeel provides the needed lift so the beer isn't cloying or heavy. Just wonderful.

This is well past expiration date, and given my experience with cellared Belgian-style beers, I didn't have high expectations here, but damn, this beer is rocking it! It pours a medium-dark brown body with just over half an inch of tan head that settles fairly quickly to a patchy sheet and thin ring. The nose is very toasty and fruity, with bread crust, caramel, fig, date, raisin, and brown sugar jumping out. Essentially the same on the palate, a strong combination of malty and dried fruit flavors dominating, such as fig and raisin, very toasty and caramely malt with a hint of smokiness, lots of toffee and brown sugar, a touch of maple syrup perhaps, and sweet, Christmas cookies. Oxidation is present but not yet detrimental. It's full bodied and rich on the palate, almost chewy, with light-medium carbonation and a soft, round mouthfeel. Overall, this is delicious. I didn't share this beer because I expected it to be over the hill, but now I'm sad I had to greedily drink the whole bottle myself. Okay, maybe not THAT sad because I have one more bottle that will hopefully be as wonderful as this bottle has been, and I'll definitely share that one.

Most people think I'm nuts to cellar Imperial IPAs, but I love to stash these European ones for a few years. They're built differently and are far less fragile than their American counterparts and I think they improve as they evolve in the bottle. I didn't record the date of purchase for this bottle, but I'm sure it's at least three years old. The beer pours a hazy, dark-amber body, but the second (and final) pour is fully murky because of all the sediment. The tan head pours to only a quarter inch before settling to a wide ring and dusty layer, leaving some spotty lace on the glass. Taking a sip, I'm immediately thinking this beer must be what is on tap in Heaven. Take me now! Deeply earthy malts are intensely caramely and moderately sweet, while the hops are now just grassy with mild bitterness. To round things out, flavors of toffee, dried apricot, orange citrus, decayed wood, and smoked meat get this beer to the top echelon. The exceptionally enticing nose is earthy, caramely, and fruity, again showing that dried apricot, orange marmalade, decayed logs, and grilled meat character. On the palate, it's full bodied, but not heavy because the sweetness is in check and there is a moderate acidity to assist the light bitterness in balancing the malty sweetness. Carbonation is a bit light, but that's not uncommon for cellared beers, and the carbonation level is sufficient anyway. Overall, this is beyond just being delicious. It's a moment to savor, to revel in, to rejoice in how amazing beer can be. Yes, after three or four years, this is beer is no longer an Imperial IPA and is clearly in the Barley Wine range now, but who cares when a beer is this amazing! I have one more cellared bottle of this beer and I plan on sharing that one!

In bocca è dolce, ricca, rotonda, finale appena amarognolo e lievemente acidulo, tanta frutta sotto spirito e vaniglia. Corpo pieno, carbonazione esile. Strepitosa.

Can. 5.0%. Best before 15.09.18. Pours a clear, deep golden/amber, with a diminishing light tan head. Sweetish aroma, with (remotely caramel) malt, fruit, hint of orange. Dusty overtone. Dark fruits as it warms. Flavour is a wee bit tart, with light malt, cereals, fruit, light metallic overtone. Medium bitter finish, lingering. Tart note, roasted hint, light overripe fruit note, hint of pineapple, grass. Overall okay, if nothing special, though a bit unbalanced. 01.04.18.
