UPDATED: JUN 28, 2021 Bottle from Knightly Spirits in Orlando, FL. Aroma is yeasty, oaky, mild herbal notes, funky grain. Taste is herbal bread, Belgian yeast vibes, sweet grass, very mild honey. Herbal and bready but very restrained / composed.

UPDATED: APR 24, 2020 Cork-top bottle, 0.75l, almost 4 years old. Aroma of brett, grapes, must, horse blanket, cereals and citrus. Pours cloudy pale golden color with thick creamy white head and sparkling appearance. Taste starts light to medium sweet grainy, following is bretty, woody, phenolic and slightly vinous, mouthfeel is smooth, while finish is mild to medium bitter. Medium body, creamy texture and average carbonation in palate. Roots grassy roots...

UPDATED: DEC 29, 2019 Frothy white fair mostly diminishing head. Yellow colour. Light malty and moderate hoppy aroma. Moderate bitter flavor. Average moderate bitter finish. Brett very present. Long moderate bitter finish. Creamy palate.

UPDATED: OCT 18, 2019 A corked and caged 750ml bottle, Batch #2, bottled in March 2014. Poured into a 3 Fonteinen stemmed glass. It was a slightly hazy golden orange colour with a one and a half finger off white head that had good retention and left some nice lacing. Aromas funky, brett, grass, hay, green apple, apricot, lemon and oak. Tastes lightly sour, funky, brett, grass, hay, herbal, green apple, lemon peel and oak with hints of apricot. Medium bodied with moderate carbonation. Overall, I kept this last bottle of Batch #2 in my cellar longer than expected, but it seems it is just as good as when I last tried it in 2016. Good funk and brett balanced with some nice fruit coming through.

UPDATED: MAR 21, 2019 Sampled from bottle. Unclear golden color, white head. Smell and taste slightly malts, bretty, typical saison funk, yeasty and some citrussy fruitpeel notes. Dry finish. Alright. 7-3-7-3-15.

UPDATED: FEB 17, 2019 Bottle from K&L wines. Hazy yellow color, white head. Bitter taste with citrus, yeast, brett, ripe fruits, grass, earthy notes and a bit of hops. Bitter finish with citrus, ripe fruits, brett, a bit of hops, grass and earthy notes. Excellent saison.
